The Lightning Knoll is a washed rind stinker made with raw goat’s milk, aged 60 days. The paste verges on gooey and the colorful rind is washed with a rotating selection of local beers and ciders, including our neighbor the Alchemist’s famous Heady Topper and our own farm-made hard cider.
